Everyone Loves Trader Joe’s Mini Sheet Cakes—Here’s How We’re Making Them at Home

The in-store version is delicious, but it’s even better when it comes from your own oven.

There are these tiny little cakes you can get from Trader Joe’s that look as irresistible as they taste— as you pass by them while browsing the aisles, they’re nearly impossible to pass up. They debuted this year, much to the joy of loyal Trader Joe’s customers.

The Carrot Mini Sheet Cake has shoppers raving over on Reddit, calling them “moist and flavorful” and even claiming they have “the most delicious frosting I’ve ever had in my life.”

There are other, more classic mini sheet cakes the store has offered for a while, including the Chantilly Cream Vanilla Bean Mini Sheet Cake and the Dark Chocolate Ganache Mini Sheet Cake. The Lemon Mini Sheet Cake, also beloved by Trader Joe’s fans, was only available for a limited time in the spring.

“I’m obsessed with this freaking cake,” a Redditor said of the Lemon Mini Sheet Cake.

But when the cakes are out of stock or out of season, you’re out of luck. While it takes a bit more effort, you can of course still make them at home—and they’re just as good, if not better.

The one thing that really sets these cakes apart is their size. So, in order to make it exactly how you’d get it at the store, you’ll want to pick up some disposable mini cake pans. You can find these at most grocers, and a bread pan works just as well.

Then, you just bake a cake exactly how you usually would. Maybe that means it comes from a box or is a fresh creation of your own, but the key is to make sure it bakes correctly in its new pan.

There are a few ways to ensure your cake bakes evenly, including the water bath hack, which involves baking it in a pan of water. The water insulates the cake, which prevents the outside of it from warming up faster than the inside. Test it every couple of minutes with a toothpick, and once it comes out clean, you’re ready to frost away.

You can use your own lemon cake recipe, chocolate cake recipe, vanilla bean cake recipe, or carrot cake recipe to mimic the Trader Joe’s versions. But no matter how you choose to dress up your mini sheet cakes, keep in mind: While the convenience of a delicious store-bought treat is indisputable, you can customize your own—and have fun doing it.
